Brown rice is better for you than white — most of us know that!

Rice Salad- Ingredients
1 cup rice
2 spring onions, thinly sliced diagonally
1 tablespoon toasted sesame seeds
1 med carrot cut into matchsticks
1 leb cucumber cut into matchsticks
2 tablespoons coarsely chopped pickled ginger
1 tablespoon lemon juice
2 tablespoons rice wine vinegar (red wine)
1 tablespoon sesame oil
Pinch of caster sugar
1. Cook rice until soft and refrigerate for 30 minutes
2. Place rice, spring onions, sesame seeds, carrot, cucumber, ginger in a bowl
3. Whisk lemon juice, vinegar, sesame oil, sugar together
4. Pour over salad
5. Season with salt and pepper
6. Toss to combine
