Gluten Free Hazelnut Cake

Gluten Free Hazelnut Cake with Chocolate Icing

Here is a super simple to make, delicious gluten free cake, that does not require any flour

You can use any icing, of course, we used chocolate as it supports the delicate Hazelnut flavour

These are the Ingredients for this Gluten Free Hazelnut Cake:

  • 4 Eggs
  • 150 g Sugar
  • 200 g finely ground Hazelnut
  • 1 tsp Baking Powder

If using raw sugar, first mill to icing sugar consistency.

In a medium bowl add the eggs, sugar, baking powder and ground Hazelnuts

Mix well – if using an electric beater, use low speed setting and mix till all ingredients are moist

Place into 26 cm round spring form

Bake at 180 deg approx 25 to 30 min, until top is lightly browned

Let cool, then take it carefully out of tin and place on cake plate




When completely cooled, make the icing:


80 g Sugar

65 g Cocoa Butter

40 g Butter

60 g Cocoa Powder

If using raw sugar, first mill to icing sugar consistency

Place sugar, cocoa and cocoa butter as well as butter into a pan and under constant stirring, melt and slowly simmer, all ingredients approx 3-4 min until well combined, melted and slightly runny

Take off heat, let stand for a moment to slightly cool, then pour over cake slowly, letting it run over sides of cake

Here are the specific Ingredients we used:


  • Organic Cocoa Powder
  • Organic Raw Sugar
  • Organic Hazelnuts
  • Organic Cocoa Butter
  • Organic Butter

We used electric beaters for mixing the batter and to mill the raw sugar and hazelnuts, we used a Thermomix

Feel free to use any type of topping or icing if you wish, simply using organic cream also works well
